Jerky Breakfast Burrito

What’s not to love about a burrito for breakfast?  They’re quick and easy to make, no fancy ingredients needed, no utensils required and oh-so delish!  And did we mention they’re also full of healthy goodness?

Here’s a quick and easy recipe for a flavourful jerky breakfast burrito that’s sure to become a family favourite.  And remember, there are no rules about what you can and can’t add to the mix.  Think out of the box (and into the fridge!) and get creative.  Diced avocado, chopped tomato, coriander, chopped parsley, thinly sliced green onions, baby spinach leaves – even leftover guacamole or some salsa spooned from a jar will transform this jerky brekkie burrito from really good to really great!

Serves 3/4

Ingredients

  • 4 large flour tortillas (homemade or store bought)
  • 1 tablespoon butter
  • 8 eggs, beaten
  • 125ml (1/2 cup) shredded cheddar or tasty cheese
  • 60ml (1/4 cup) Havarti cheese
  • 125ml (1/2 cup) jerky, shredded or crumbled
  • Hot sauce to taste
  • Salt and freshly ground black pepper to taste

 

Method

  • Warm a flat frying pan or skillet over medium heat and fry the tortillas briefly to warm them up and make them pliable. (You can also give them a quick zap in the microwave).  Set aside and keep warm.
  • Melt butter in a pan over medium heat and cook scrambled eggs until just done and holding their shape.
  • In a bowl, combine the cooked scrambled eggs, both cheeses, the jerky, a good grind of salt and pepper and a dash of hot sauce. Our favourite is the smoked habanero BBQ sauce from the award-winning Dr Pauls Hot Sauce range, but you can use any spicy sauce.
  • Divide the egg mixture evenly among the tortillas – adding any other ingredients like chopped coriander, salsa, chopped avocado etc onto the top of the scrambled egg mix before rolling each tortilla into a burrito shape.
  • Place the rolled burritos (seam side down) onto a lightly greased skillet or frying pan and cook for a minute or two each side until golden brown and slightly crispy.

 

Serve immediately and enjoy!
