Jerky and Kimchi Quesadillas

Now you won’t have to choose between Mexican or Korean for a meal or a snack because this tasty recipe is the perfect low-effort, high-reward combo of the two.

Kimchi may not be an obvious choice for a quesadilla, but the tangy, funky flavour and health benefits of this fermented food take this comforting cheesy tortilla to the next level.  And when you add the meaty goodness of jerky to the mix, you won’t believe the flavour and texture bomb you’ve created!

Serves 2-4

Ingredients

  • 4 large flour tortillas (home-made or store-bought)
  • 250ml (1 cup) shredded cheese (cheddar, tasty cheese or a blend of cheeses)
  • 125ml (1 cup) chopped jerky (remember, you can experiment with different flavours of jerky like smoky BBQ, extra hot and mango chilli)
  • 125ml (1/2 cup) kimchi, drained
  • Butter (for cooking)

 

Method

  • Spread each tortilla with a thin layer of cheese
  • Top with jerky, kimchi and more cheese
  • Fold the tortillas in half
  • Heat a large skillet over medium heat
  • Melt a knob of butter and cook quesadillas until golden brown and crispy on the outside and the cheese melted on the inside
  • Flip and cook the other side the same way
  • Serve immediately and enjoy!
