Asian Papaya And Jerky Salad

Throw this simple yet surprisingly delicious salad together and wait for the compliments.  It’s fresh, colourful, full of healthy goodness and just a little bit exotic, so you can happily serve it when you’re entertaining guests or just savour it as an anytime snack or light meal.  The Asian flavours come through strongly in the vibrant dressing and the addition of protein-rich jerky provides a tasty twist.

Serves 4-6 (as a side)

Ingredients

  • 1 red papaya
  • 150g jerky (sliced into thin strips)
  • ½ red onion, thinly sliced or finely chopped
  • ½ cucumber, sliced thinly into rounds
  • Small packet rocket
  • Handful of Thai basil (can substitute with fresh coriander or mint)
  • 1 lime
  • Chopped unsalted peanuts (optional garnish)

Dressing (can be made ahead of time and refrigerated)

  • 2 cloves of garlic (minced or very finely sliced)
  • 1 teaspoon freshly chopped ginger
  • Sriracha/chopped or sliced red chillies/hot sauce to taste
  • 2 teaspoons brown sugar (dissolved in 2 tablespoons boiling water)
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice

Method

  • Make the dressing by mixing all the ingredients together. Shake the jar or whisk to combine and refrigerate until needed.
  • Cut papaya into bite sized pieces and squeeze the lime over the fruit
  • Slice cucumber thinly into rounds
  • Toss these together with the chopped red onion and Thai basil
  • When ready to serve, toss the salad ingredients with the dressing and top with crushed peanuts (can also use toasted coconut flakes)

 

This salad is so versatile – you can make it your own by adding extra veg like snake beans, bean sprouts, cherry tomatoes, charred corn and grated carrot.  The jerky adds a meaty depth to this kaleidoscope of colour, texture and taste and it’s a guaranteed crowd pleaser.  Enjoy!
