Ramen Soup With Beef Jerky And Shiitake Mushrooms

What’s better than a steaming bowl of ramen?  Ramen with jerky of course!  This addition of this dried meat snack adds a satisfying umami depth to this comforting favourite and you’ll love the flavours and the textures of this version.  Trust us.  It’s that good!

Serves 2

Ingredients

  • 1 small white onion, sliced thinly
  • 1 garlic clove, minced
  • Knob of ginger, thinly sliced or minced
  • 2 tablespoons olive oil (you can also use a sesame oil for golden toastiness, but go easy on it as it is a strong flavour)
  • 1 litre (4 cups) good quality vegetable or chicken stock
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons soy sauce
  • 1 packet dried shiitake mushrooms (around 20g)
  • 2 packets instant ramen noodles (around 375g)
  • 70g jerky, thinly sliced (traditional flavour beef jerky works best with this recipe)
  • Sriracha, sambal oelek or any other hot sauce – our favourite is Dr Pauls Hot Sauce. This ingredient is optional if you don’t like your ramen spicy. Add to taste.
  • 2 tablespoons (30ml) miso
  • 2 tablespoons finely chopped chives (fresh chives are ideal, but you can use 1 tablespoon of the dried variety)
  • ½ packet baby spinach (optional)

Method

  • Heat oil in a pot over medium heat, then add garlic and onion. Cook until soft and translucent and stir often to prevent burning
  • Add the stock and the mushrooms
  • Add hot sauce or sriracha to taste
  • Bring to a boil, then turn down the heat and simmer for 15 minutes. Season to taste before adding noodles etc
  • Add the remaining ingredients and cook over high heat while stirring
  • Serve immediately

 

This heartwarming ramen is super quick, yet rich and satisfying with plenty of yummy umami flavour from the mushrooms, the aromatics and the beef jerky.

Tip:  Add the noodles into the simmering broth in a chunk and press them down to keep them submerged.  Resist the temptation to stir or break them up, they’ll soften and separate naturally.
