INGREDIENTS
- 1/2 cucumber, sliced
- 1 packet rocket leaves
- 1 packet watercress leaves
- 1 Avocado, cubed
- 1 yellow pepper, squared
- 1 punnet cherry tomatoes
- 1 ripe mango, cubed
- 250gm D.Jays moist biltong sliced
- 80g fetta cheese, cubed
- Dressing – 5 tablespoons honey, 3 tablespoons Dijon mustard, 2 tablespoons white wine vinegar, 2 tablespoons olive oil, pinch salt, pinch pepper, pinch sugar
METHOD
Mix all the ingredients together in a large bowl. Mix dressing, pour over the salad and toss well. Enjoy!
Hint: add some fresh chilli to the dressing for a nice kick of heat!
