Avocado, Fetta & Biltong Salad
INGREDIENTS
1/2 cucumber, sliced
1 packet rocket leaves
1 packet watercress leaves
1 Avocado, cubed
1 yellow pepper, squared
1 punnet cherry tomatoes
1 ripe mango, cubed
250gm D.Jays moist biltong sliced
80g fetta cheese, cubed
Dressing – 5 tablespoons honey, 3 tablespoons Dijon mustard, 2 tablespoons white wine vinegar, 2 tablespoons olive oil, pinch salt, pinch pepper, pinch sugar
METHOD
Mix all the ingredients together in a large bowl. Mix dressing, pour over the salad and toss well. Enjoy!
hint, add some fresh chilli to the dressing for a nice kick of heat!
